EASTER ON THE LAGOON

..................................

...Easter with who you like... is an old Italian saying.
Easter on the lagoon serves up the first fruits of Spring: delicious "castraure" (baby artichokes) and tasty "moeche" (crabs).

"Castraure" are the first artichokes sacrificed during cultivation so that more than one artichoke grows on one plant.
Fried "castraure" is a typical dish from the island of Sant'Erasmo, as well as being a great delicacy.

"Moeche" are crabs at the moment in which their carapace is changing. During this mutation, the crabs are particularly tasty and tender.
They can be eaten alone or as a part of a mixed fried dish.
